Super Quick Soda Bread

If this bread was a person, you'd call it a floozy. It's that easy! I made this on Saturday night, because I wanted a cheese sandwich but was out of bread. It takes all but 35 minutes to throw together and bake, which is really just as quick as finding your wallet, putting on your shoes and jacket and walking to the shop and back. It's best eaten really fresh and also goes well with soup. I love to dunk big chunks of warm soda bread in a creamy tomato soup!

The recipe calls for buttermilk, but I have made it successfully on several occasions using plain yoghurt mixed with a bit of milk to make up the right quantity of liquid.

SUPER QUICK SODA BREAD

NEED:

500g flour
1/2 tsp salt
2 tsp baking soda
400 ml buttermilk (or part plain yoghurt, part milk to make up 400 ml)

DO:

Preheat the oven to 210°C.

In a big mixing bowl, gently combine all the ingredients until they just come together to form a dough. This is best done using your hands.

Form  a rough ball shape and place on a baking sheet lined with baking paper or silicone. Cross the top with a serrated knife.

Bake soda bread for about 30 minutes. It is done when the loaf looks golden brown and sounds hollow when tapped.

  1. That looks so tasty! I've made bread lots of times before but not soda bread! But looking at the recipe, it looks a lot like what in Aus we would call Damper, and I've made that before! Yum!
