Oranges With Lime And Honey Dressing

One of the big privileges in my life right now is that I am allowed to work from home one day a week. Not only am I strangely more efficient when my laptop and I are stationed at the kitchen table, but I also love the fact that on those days I am able to make a fresh breakfast and lunch for myself.

Last week I decided it was time to use up some of the vibrant-looking blood oranges from my fridge and fixed this simple fruit salad to get me going in the morning. The sweet spices together with the tart smell and taste of the citrus fruit and the wonderful dark pink and bright green hues on my plate made for an alert and productive me!

 

Oranges with Lime and Honey Dressing
(Serves 1)

Need To Have:

2 oranges
juice of 1/2 lime
1 tsp honey
vanilla powder (to taste)
cinnamon (to taste)
pistachios (optional)

Need To Do:

With a sharp knife, cut the ends of the oranges and, standing them up on the cutting board, carefully remove all the skin and white pith. Then slice each orange about 5mm thick and arrange the slices on a plate. Remove any seeds you might encounter. Catch and save any of the juices that have run onto the board.

In a jam jar or other container with a tight-fitting lid, combine the saved orange juice, lime juice, honey, vanilla and cinnamon. Close the jar and shake to combine. Drizzle the dressing over the orange slices.

If using, roughly chop the pistachios and scatter them over the salad.
